Creole Sausage with Rice and Beans

Ingredients

* 1 16oz package smoked sausage, sliced
* 2 10oz cans diced tomatoes with green chiles
* 3.5c fat-free, less-sodium chicken broth
* 2 tsp Creole seasoning
* 1.5c uncooked converted long grain rice
* 2 15oz cans red beans, rinsed and drained

Directions

* Cook sausage in a large skillet over medium heat 5 minutes or until brown; drain. Place in a 4qt slow cooker; stir tomatoes and next 3 ingredients
* Cover and cook on LOW 3.5 hours. Stir in beans. Cover and cook on High 30 minutes or until throughly heated.

Makes 8 servings.
