* 1lb firm tofu, cut int 3/4" cubes
* 13oz hokkien (egg) noodles
* 2tsp cornflour (cornstrach)
* 1tbsp peanut oil
* 2tsp finely chopped ginger
* 2 spring onions (scallions), finely sliced on the diagonal
* 2 spring onions (green part only), extra, finely sliced on the diagonal
* 1.5tbsp salted black beans, rinsed and roughly chopped
* 1tbsp chili bean paste
* 1tbsp dark soy sauce
* 4oz (1/2c) chicken stock
* 1tbsp chinese rice wine
* 2 garlic cloves, finely chopped
* 1/2tsp sesame oil
